The editorial staff of FoodService and Moyo Delo. Magazin carry out their own market research aimed at obtaining reliable qualitative and quantitative information about the Russian restaurant and retail markets.

Since 2008 FoodService has been conducting the annual study of the Russian eating out market, which enables us to put together rankings of top restaurant operators and chains in Russia, Moscow and Saint Petersburg, to track the performance of separate segments and individual players, to identify market trends and determine the potential of different regions, cuisines and formats. The data for the research is supplied by the restaurant companies. We question around 100 top players in the eating out market about the number of outlets in Russia and in the largest cities of the country, the average check, the regions the company entered within the last year, and other parameters interesting for analysis. Some of the research results are presented annually at the Russian FoodService Forum and published in the December issue of FoodService magazine.
